A juicy tomato chutney with a kick of spices, perfect with plain dosa.

1 1/2 red onions - halved and sliced thinly
4 toms halved and sliced
3 green chilli finely sliced
Small chunk of ginger crushed
Handful of curry leaves (optional)
2 tbsp veg oil
1tbsp spice mix (fenugreek, mustard seeds and cumin)
Salt to taste
Put the cut onions, toms, chilli, crushed ginger, curry leaves in a bowl and leave to one side.
Add the oil to a small saucepan and heat till hot. Add the spice mix to the hot oil and let the mustard seeds spit for a 5-10 seconds. Add the cut veg to the spices and place on a low flame. Add salt to taste and put the lid on. Let simmer for around 10 mins till onions are soft and it looks cooked.
