Fermented on the Farm
Our menu is centred around Dosa and its smaller, plumper version Idli, made from a fermented batter. To make it we wet grind urud dhal and idli rice, leaving the batter for at least 24h to ferment and develop flavour.
These are traditional, hearty South Indian dishes – high in protein and carbohydrates, containing no added sugars or saturated fats.
We serve Idli at festivals and events where we expect a crowd. If you visit us at market, we’ll be serving our signature Masala Dosa.
Dosa… or Idli?
Dosa is a savoury pancake cooked with a dash of sesame oil on a hot plate, which we fill with potato masala forming a kind of wrap, and serve with dhal and chutney.
Meanwhile with Idli, the batter is poured into a small mould and steamed, resulting in satisfying little ‘rice’ cakes served with curries and chutneys.

Dosa and Idli (because they are the same batter!) have a light and unique flavour, with a little tang from the fermentation. We serve them with different kinds of sides which may vary from time to time. Think a delicious dhal or freshly made coconut chutney... Unlike most street food, our cooking is hearty and leaves you feeling healthy!

Our food is very mild, where we only use a little chilli balanced with other flavours and spices like onion, garlic, ginger, turmeric, fenugreek, mustard and cumin.

We grow a lot of potatoes, onions, tomatoes, beans and greens – as well as trialling things like Sri Lankan okra and Malabar Spinach.
In an ideal world, we would have such an abundance of veg that we could use them fresh as well as storing and preserving them for the rest of the year. In reality, our farm is still in its infancy and we are often at the mercy of the British summers. Year on year, we'll be hoping to grow more and more produce for the stall.

Yes, our menu is 100% gluten free – with our batter made from rice and lentils.

We use a sesame oil to make our dosas crispy and use mustard seed for flavouring. If you have any allergies, intolerances or coeliac disease, please speak to us before you order and ask for our Allergen sheet.
